Hey there everyone.
I have a 60's Joe Mathis bass body with the numbers R007 stamped in the body under the pickguard. Year date anybody?

Hi, and welcome to the forum. Unfortunately, I'm not the most familiar with the Joe Maphis (not Mathis) instruments, and I'm not sure where there are any serial number lists. Perhaps there are some, though that's an instrument I didn't personally start documenting.
It would help if you post a photo of the body, though; I'm aware that there are at least 2 different body styles, though I have no idea if that applies to the Bass or not.
